So I have been on a simple dinner kick lately. I of course browsed through Pinterest and found this delightful eggplant Parmesan recipe! It’s fantastic! Seriously you cut up your eggplant about 1/2 inch thick, season it with olive oil and herbs, bake it at 400 for 20 minutes flipping it half way through. Then coat it with your favorite pasta sauce and cheese and bake it again for about 10 minutes. It’s simple, light, and yum! here’s where I found it and cmon look at that picture! 😎
